Ouverture totale<\/h2>\n<p>Dans un contexte de <em>post-truth <\/em>et de<em> fake news<\/em>,<a href=\"http:\/\/www.mintel.com\/global-food-and-drink-trends\/\" target=\"_blank\" rel=\"noopener\"> les consommateurs exigent une transparence absolue <\/a>des entreprises alimentaires. Les scandales alimentaires, les rappels de produits et la m\u00e9fiance g\u00e9n\u00e9rale \u00e0 l\u2019\u00e9gard des entreprises ont entam\u00e9 la confiance du consommateur : les clients demandent une clart\u00e9 totale concernant la s\u00e9curit\u00e9 et l\u2019origine des produits alimentaires. Les fabricants y r\u00e9pondent avec des all\u00e9gations telles que \u2018naturel\u2019, \u2018sans additifs\u2019, \u2018\u00e9cologique\u2019, \u2018respectueux du bien-\u00eatre animal\u2019, mais cela ne suffit pas. Une ouverture totale s\u2019impose : comment, o\u00f9, quand et par qui un produit a-t-il \u00e9t\u00e9 r\u00e9colt\u00e9, fabriqu\u00e9 ou vendu ? L\u2019apparition d\u2019apps permettant aux consommateurs de d\u00e9terminer l\u2019origine des produits est marquante. Pour eux le facteur \u2018local\u2019 est un atout : 70% des Italiens, 66% des Fran\u00e7ais, 58% des Espagnols, 56% des Allemands et 55% des Polonais font davantage confiance \u00e0 une entreprise qui produit dans son propre pays. Cette tendance doit \u00e9galement inciter les retailers \u00e0 fournir plus d\u2019informations concernant l\u2019origine de leurs marques maison.<\/p>\n<h2>\n2. Recherche d\u2019\u00e9quilibre<\/h2>\n<p>Les gens cherchent \u00e0 bannir la n\u00e9gativit\u00e9 de leur vie et \u00e0 prendre mieux soin d\u2019eux-m\u00eames. D\u2019o\u00f9 le besoin d\u2019un mode de vie sain avec un r\u00e9gime \u00e9quilibr\u00e9 et suffisamment de \u2018me-time\u2019. Cependant les informations contradictoires sur ce qui est sain et ce qui ne l\u2019est pas constituent d\u00e9j\u00e0 un stress en soi. Devons-nous \u00e9viter le sucre, ou la graisse, ou les additifs ? En r\u00e9action les consommateurs vont plut\u00f4t s\u2019int\u00e9resser aux ingr\u00e9dients sains contenus dans les aliments. Une approche positive, qui entra\u00eene une attention accrue pour les substances naturelles et v\u00e9g\u00e9tales (c\u00e9r\u00e9ales, graines, plantes aromatiques, \u2026). En m\u00eame temps les gens aiment parfois se faire un petit plaisir pour diminuer leur stress : c\u2019est l\u00e0 qu\u2019entrent en jeu les \u2018snacks sains\u2019. L\u2019industrie peut r\u00e9pondre \u00e0 ce besoin par des solutions positives, telles que des portions contr\u00f4l\u00e9es et des ingr\u00e9dients adapt\u00e9s, afin de permettre au consommateur de faire un choix en fonction de ses besoins nutritionnels, physiques, \u00e9motionnels.<\/p>\n<h2>\n3. La texture avant tout<\/h2>\n<p>Boire et manger sont des activit\u00e9s qui dans le meilleur des cas sollicitent divers sens. M\u00eame si la forme et la couleur restent des facteurs importants (cf. Instagram et Pinterest), la texture surtout offre de nouvelles possibilit\u00e9s de se distinguer. Songez aux formules d\u2019abonnement, aux apps de reconnaissance vocale comme Amazon Echo et Google Home, ou encore aux distributeurs automatiques intelligents proposant des promotions personnalis\u00e9es. D\u2019ailleurs dans la reprise de <strong>Whole Foods <\/strong>par <strong>Amazon<\/strong> aussi tout est question de donn\u00e9es, afin de mieux cerner le comportement du consommateur et de diffuser des offres plus cibl\u00e9es. La personnalisation attire le consommateur \u00e0 condition que l\u2019avantage qu\u2019il peut en tirer soit clair :\u00a0 une app qui l\u2019aide \u00e0 faire son shopping de mani\u00e8re plus efficace, des suggestions de recettes en fonction de sa liste de courses, des recommandations sur base de son comportement d\u2019achat \u2026 . Si les consommateurs attachent plus d\u2019importance au confort, \u00e0 la valeur et au temps qu\u2019\u00e0 la marque, les fabricants de marques se verront contraints d\u2019\u00eatre plus pertinents, plus efficaces et plus accessibles. A titre illustratif, citons ici l\u2019exemple de <strong>Brandless<\/strong>, un webshop am\u00e9ricain qui propose <a href=\"https:\/\/www.retaildetail.be\/fr\/news\/m-tail\/tout-%C3%A0-3-dollars-sur-le-webshop-brandless\" target=\"_blank\" rel=\"noopener\">des produits alimentaires de qualit\u00e9 sans marque au prix fixe de trois dollars.<\/a><\/p>\n<h2>\n5.
