La durabilit\u00e9 n\u2019est plus ch\u00e8re per se. Et un discounter intelligent comme Lidl n\u2019est depuis longtemps plus seulement le magasin des consommateurs \u00e0 faibles revenus. La moiti\u00e9 de nos clients ont des revenus plus \u00e9lev\u00e9s\u2009\u00bb, d\u00e9clare Philippe Weiler, responsable du d\u00e9veloppement durable chez Lidl Belux. Il ne laisse planer aucun doute sur la strat\u00e9gie du discounter&nbsp;: \u00ab\u2009Avec Lidl, nous voulons faire de la durabilit\u00e9 la norme et la rendre accessible \u00e0 tous. Cela signifie que, en tant que client, vous ne devez ni avoir des connaissances en mati\u00e8re de durabilit\u00e9 ni payer le double du prix.\u2009\u00bb<br \/>\n&nbsp;<\/span><\/p>\n<p><span style=\"background-color:white\">L\u2019approche de Lidl repose sur un simple constat&nbsp;: \u00ab\u2009La durabilit\u00e9 ne se vend pas. C\u2019est peut-\u00eatre le cas dans les magasins du monde-Oxfam ou les magasins bio&nbsp;: ce sont des magasins de niche o\u00f9 les consommateurs se rendent sp\u00e9cialement pour acheter des produits durables ou \u00e9quitables. Mais si nous, chez Lidl, proposons dix produits \u00e0 base de poulet dans notre rayon frais, dont un poulet bio, ce poulet bio ne se vendra pas. Sa part dans le chiffre d\u2019affaires sera tellement infime compar\u00e9e au reste que nous devrons retirer ce produit de la gamme au bout de quelques semaines seulement, malgr\u00e9 une importante campagne publicitaire. Nous parlons d\u2019exp\u00e9rience.\u2009\u00bb<\/span><\/p>\n<h2><span style=\"background-color:white\">Une m\u00e9moire courte<\/span><\/h2>\n<p><span style=\"background-color:white\">La conclusion semble \u00e9vidente&nbsp;: \u00ab\u2009La durabilit\u00e9 n\u2019est pas une priorit\u00e9 pour le Belge moyen. Ce dont il se soucie, par contre, c\u2019est de l\u2019annulation brutale de ses vacances en Tha\u00eflande \u00e0 cause du coronavirus, ou de l\u2019annulation d\u2019un barbecue. Ces derni\u00e8res ann\u00e9es, nous avons tout de m\u00eame constat\u00e9 une sensibilisation croissante autour la durabilit\u00e9&nbsp;: les ventes de viande diminuent l\u00e9g\u00e8rement, tandis que celles de produits v\u00e9g\u00e9tariens, biologiques et \u00e9quitables augmentent l\u00e9g\u00e8rement. Nous constatons \u00e9galement qu\u2019un nombre croissant de consommateurs, essentiellement des jeunes adultes, sont pr\u00eats \u00e0 acheter de fa\u00e7on plus durable et \u00e0 payer un peu plus cher pour cela. C\u2019est une bonne chose.\u2009\u00bb<br \/>\n&nbsp;<\/span><\/p>\n<p><span style=\"background-color:white\">Mais la durabilit\u00e9 ne motive pas le choix pour tel ou tel produit. Le prix et la qualit\u00e9 pr\u00e9valent. En outre, les consommateurs ont la m\u00e9moire courte lorsqu\u2019il s\u2019agit de durabilit\u00e9&nbsp;: \u00ab\u2009Souvenez-vous des terribles images de porcs maltrait\u00e9s dans un abattoir diffus\u00e9es il y a quelques ann\u00e9es par Animal Rights. Tout le pays avait cri\u00e9 au scandale. Le lundi suivant, les ventes de viande de porc avaient chut\u00e9, tout comme le mardi, mais elles avaient commenc\u00e9 \u00e0 se stabiliser le mercredi avant de repartir \u00e0 la hausse le jeudi, pour finalement retrouver leur niveau habituel le week-end. Selon moi, cela prouve que le Belge a la m\u00e9moire courte lorsqu\u2019il s\u2019agit de durabilit\u00e9&nbsp;: apr\u00e8s 48 heures, nous revenons \u00e0 nos habitudes et nous achetons \u00e0 nouveau les ribs pour le barbecue du week-end.\u2009\u00bb<\/span><\/p>\n<p><span style=\"background-color:white\">&nbsp;<\/span><\/p>\n<h2><span style=\"background-color:white\">Une forme extr\u00eame d\u2019encouragement<\/span><\/h2>\n<p><span style=\"background-color:white\">C\u2019est donc pour toutes ces raisons que Lidl a d\u00e9cid\u00e9 en 2017 de ne pas proposer la durabilit\u00e9 comme alternative, mais de l\u2019int\u00e9grer dans toute son organisation&nbsp;: \u00ab\u2009Pensez \u00e0 notre strat\u00e9gie climatique, \u00e0 notre politique RH, au partenariat avec nos fournisseurs. Nous savons que cette approche nous rend nettement plus forts en tant qu\u2019entreprise&nbsp;: plus forts face \u00e0 une crise telle que la crise du coronavirus, plus forts pour attirer les bons collaborateurs, plus forts dans notre secteur tr\u00e8s concurrentiel et plus forts pour pouvoir garantir notre offre de produits.\u2009\u00bb<br \/>\n&nbsp;<\/span><\/p>\n<p><span style=\"background-color:white\">\u00ab\u2009C\u2019est pourquoi nous ne laissons pas le choix \u00e0 nos clients&nbsp;: tous les produits doivent \u00eatre plus durables. Appelez cela une forme extr\u00eame d\u2019<em>encouragement<\/em>. Toute notre gamme surgel\u00e9e de poissons frais et non transform\u00e9s est d\u00e9j\u00e0 durable, conform\u00e9ment aux normes du MSC et de l\u2019ASC. Toute notre gamme de viande de porc porte d\u00e9j\u00e0 le label Beter Leven une \u00e9toile, ce qui est une garantie d\u2019un plus grand respect du bien-\u00eatre animal. Les \u00e9leveurs de porcs re\u00e7oivent une prime \u00e0 cet \u00e9gard, que nous ne r\u00e9percutons pas sur le consommateur. Cela nous co\u00fbte des millions. Aujourd\u2019hui, tout notre cacao est 100&nbsp;% durable, de la tablette de chocolat aux copeaux de chocolat dans les bo\u00eetes de c\u00e9r\u00e9ales. Tout notre charbon de bois est certifi\u00e9 FSC. Toutes nos bananes sont durables&nbsp;: Fairtrade ou Rainforest Alliance. Aucun autre d\u00e9taillant ne peut s\u2019en vanter.\u2009\u00bb<\/span><\/p>\n<p><span style=\"background-color:white\">&nbsp;<\/span><\/p>\n<h2><span style=\"background-color:white\">Dialogue avec les fournisseurs<\/span><\/h2>\n<p><span style=\"background-color:white\">En bref, Lidl rend l\u2019ensemble de sa gamme plus durable, ce qui a g\u00e9n\u00e9r\u00e9 une augmentation consid\u00e9rable des ventes de produits durables chez le d\u00e9taillant. \u00ab\u2009En outre, nous nous attachons d\u00e9sormais \u00e0 rendre la relation avec nos fournisseurs plus durable. 90 \u00e0 95&nbsp;% de notre empreinte \u00e9cologique ne vient pas directement de nos magasins, mais de notre cha\u00eene, avec nos fournisseurs. Nous avons donc deux options&nbsp;: soit nous adoptons une approche top-down, soit nous optons pour une strat\u00e9gie bottom-up. L\u2019approche classique du discounter est plut\u00f4t d\u2019adopter une strat\u00e9gie top-down, en se concentrant en priorit\u00e9 sur le prix. Mais c\u2019est justement parce que nous avons op\u00e9r\u00e9 la transition et que nous int\u00e9grons davantage la durabilit\u00e9 dans notre organisation que nous allons opter pour un partenariat bottom-up avec nos fournisseurs.\u2009\u00bb<br \/>\n&nbsp;<\/span><\/p>\n<p><span style=\"background-color:white\">Comment est-ce que Lidl travaille avec ses fournisseurs pour promouvoir la durabilit\u00e9\u2009? C\u2019est ce que nous expliquera Philippe Weiler lors du RetailDetail Food Congress, qui aura lieu le jeudi 15 octobre.
