Le tableau bross\u00e9 par l\u2019expert en food-services Eddy Bovijn (<strong>Food In Mind<\/strong>) est mitig\u00e9. Il a sond\u00e9 les attentes de 120 acteurs cl\u00e9s dans tous les segments du food-service et a compil\u00e9 les r\u00e9sultats dans un rapport intitul\u00e9 \u00ab\u00a0<em>Foodservices anno 2022 <\/em>&#8211; <em>How to arm ourselves after corona<\/em>\u00a0\u00bb.<\/p>\n<p>\u00a0<\/p>\n<p>On y apprend notamment que les restaurants \u00ab\u00a0Quick Service\u00a0\u00bb ont assez bien r\u00e9sist\u00e9 \u00e0 la crise sanitaire gr\u00e2ce aux plats \u00e0 emporter. Dans l\u2019ensemble, ce segment a essuy\u00e9 une baisse du chiffre d\u2019affaires de 19% et pr\u00e9voit une croissance de 10% pour cette ann\u00e9e \u2013 qui ne leur permettrait cependant pas de retrouver le niveau d\u2019avant l\u2019\u00e9pid\u00e9mie.<\/p>\n<p>\u00a0<\/p>\n<p>L\u2019avenir semble donc incertain\u00a0: \u00ab\u00a0Nous craignons des faillites. Environ 20% des entreprises vont dispara\u00eetre, principalement les acteurs de plus petite taille, moins organis\u00e9s. Les restaurants Quick Service sont souvent confront\u00e9s \u00e0 des frais de personnel \u00e9lev\u00e9s, mais des investissements dans la technologie peuvent cependant contribuer \u00e0 les r\u00e9duire. Les restaurants ach\u00e8tent plus souvent des composants de repas et des produits semi-finis. Les fabricants de produits surgel\u00e9s, en particulier, font de bonnes affaires.\u00a0\u00bb<\/p>\n<p>\u00a0<\/p>\n<h2>Plats \u00e0 emporter<\/h2>\n<p>Les services de plats \u00e0 emporter ont \u00e9galement aid\u00e9 les meilleurs restaurants \u00e0 survivre\u00a0: ils ont perdu en moyenne 40% de leur chiffre d\u2019affaires l\u2019ann\u00e9e derni\u00e8re et esp\u00e8rent reprendre le terrain perdu cette ann\u00e9e. La hype des plats \u00e0 emporter devrait rapidement s\u2019estomper une fois que les restaurants pourront rouvrir leurs portes, pense Eddy Bovijn. \u00ab\u00a0Les gens commencent \u00e0 s\u2019en lasser. Et 70% des consommateurs n\u2019ach\u00e8tent jamais de plats \u00e0 emporter. De plus, 14% des Belges affirment qu\u2019ils sortiront plus souvent au restaurant une fois qu\u2019ils seront vaccin\u00e9s qu\u2019avant la crise, selon une enqu\u00eate post-corona men\u00e9e par Food in Mind et iVOX.\u00a0\u00bb<\/p>\n<p>\u00a0<\/p>\n<p>Les restaurants routiers ont vu leur chiffre d\u2019affaires s\u2019effondrer de 47% et pr\u00e9voient une reprise de 20% cette ann\u00e9e. Ils ont beaucoup souffert de la baisse du trafic. Et eux aussi ont d\u00fb passer \u00e0 un concept pr\u00e9emball\u00e9. Les formules de buffet ne sont pas une option en p\u00e9riode de crise sanitaire, et elles pourraient ne pas survivre \u00e0 l\u2019\u00e9pid\u00e9mie \u2013 du moins sous la m\u00eame forme. \u00ab\u00a0Ces formules doivent se r\u00e9inventer. Le concept classique des <strong>Lunch Garden<\/strong> et autres <strong>Autogrill<\/strong> est d\u00e9pass\u00e9.\u00a0\u00bb<\/p>\n<p>\u00a0<\/p>\n<h2>Les boutiques de stations-service deviennent des lieux de pause<\/h2>\n<p>Les boutiques de stations-service sont \u00e9galement \u00e0 l\u2019aube de changements majeurs, poursuit Eddy Bovijn. \u00ab\u00a0Elles deviennent plus que jamais des magasins de proximit\u00e9. Et les clients y passeront de plus en plus de temps \u00e0 mesure que la voiture \u00e9lectrique se popularisera. On n\u2019y viendra plus pour faire le plein en vitesse, mais pour recharger sa voiture \u2013 et en profiter pour travailler un peu ou manger un bout. Le Shop &amp; Go se transformera ainsi en Eat &amp; Go&#8230;\u00a0\u00bb<\/p>\n<p>\u00a0<\/p>\n<p>Le secteur est en plein bouleversement, affirme Eddy Bovijn. La jeune g\u00e9n\u00e9ration d\u2019entrepreneurs de l\u2019horeca r\u00e9fl\u00e9chit en termes de concepts\u00a0: ils surfent intelligemment sur les tendances actuelles, avec une carte r\u00e9duite. \u00ab\u00a0L\u2019avenir est \u00e0 une combinaison de branding performant et de concepts de franchises extensibles. <strong>Bavet<\/strong> en est un bon exemple, avec beaucoup d\u2019exp\u00e9rience client et pourtant une grande efficacit\u00e9-co\u00fbt. Le secteur a besoin de comp\u00e9tences en gestion, de professionnalisation.
