Consumenten genereren gestructureerde data met hun (online) koopgedrag of door een winkel te bezoeken, maar ook met ongestructureerde data over wat zij bijvoorbeeld op social media vertellen. Dit concludeert ABN AMRO in het rapport Voedsel wordt bits and bites. Digitale transformatie van de foodsector.<\/p>\n<p>\u00a0<\/p>\n<h2>Waardetoevoeging naar winkelvloer<\/h2>\n<p>\u00a0<\/p>\n<p>Bedrijven in de foodsector kunnen door de grotere beschikbaarheid van data en betere analysemethoden het veranderende gedrag van consumenten beter voorspellen en onverwachte verbanden ontdekken.<\/p>\n<p>\u00a0<\/p>\n<p>\u201cDit leidt tot meer gepersonaliseerde aanbiedingen in de supermarkt en uiteindelijk tot voeding die is afgestemd op iemands leefstijl of gezondheidssituatie\u201d, vertelt Rob Morren, Sector Banker Food van ABN AMRO.<\/p>\n<p>\u00a0<\/p>\n<p>\u201cSteeds meer activiteiten die waarde toevoegen verschuiven naar de winkelvloer. Ook fabrikanten moeten scherp blijven als ze relevant willen zijn. Dit kan bijvoorbeeld door sneller in te spelen op smaakvoorkeuren of met maaltijdcomponenten meegroeien met de trend dat steeds meer retailers voor de ogen van de consument verse maaltijden samenstellen\u201d.<\/p>\n<p>\u00a0<\/p>\n<h2>Informatie over herkomst eten<\/h2>\n<p>\u00a0<\/p>\n<p>De digitale transformatie biedt volgens Morren ook kansen om meer informatie over de herkomst van het eten naar de consumenten te brengen. \u201cZo kunnen boeren aantonen wat de CO2-footprint van een stuk vlees is geweest\u201d.<\/p>\n<p>\u00a0<\/p>\n<p>Bedrijven in de foodsector moeten volgens ABN AMRO meer digitaal gedreven zijn om snel te kunnen inspelen op veranderende consumentenvoorkeuren en loyaliteit te vergroten. Dit geldt niet alleen voor de \u2018voorkant\u2019, waar alles draait om wat de consument koopt en eet, maar ook voor de \u2018achterkant\u2019 in de keten. Met een meer gedigitaliseerd en flexibeler productieproces is veel te winnen op het gebied van kwaliteit, efficiency en innovatie.<\/p>\n<p>\u00a0<\/p>\n<h2>Data delen voor aanbiedingen<\/h2>\n<p>\u00a0<\/p>\n<p>Hoewel de consument verwacht dat er met zijn voorkeuren rekening wordt gehouden wil lang niet iedereen persoonlijke data delen. De consument is sneller bereid om data te delen in ruil voor aanbiedingen, zo blijkt uit onderzoek van TNS Nipo in opdracht van ABN AMRO. Dit is sterk financieel gedreven en de consument is hiertoe eerder bereid als er een aanbieding in de supermarkt tegenover staat. Dan heeft 48 procent van de Nederlanders er geen of totaal geen bezwaar tegen dat persoonlijke gegevens en aankoopgedrag voor dit doel worden verwerkt.<\/p>\n<p>\u00a0<\/p>\n<p>De bereidheid om persoonlijke data te delen verschilt per situatie, benadrukt ABN AMRO. Als het gaat om de bereidheid om aankoopinformatie te delen met producenten voor het verbeteren van samenstelling of smaak zijn zij veel terughoudender. Dan geeft 47 procent aan hiertegen veel of zeer veel bezwaar te hebben.<\/p>\n<p>\u00a0<\/p>\n<p>De consument is wel positiever als data bijvoorbeeld worden gebruikt om verpakkingen te maken die verspilling tegengaan: 41 procent heeft hiertegen geen of totaal bezwaar.<\/p>\n<p>\u00a0<\/p>\n<p>\u201cDataverzameling is niet nieuw, maar de hoeveelheid beschikbare data &#8211; samen met de snelheid en rekenkracht waarmee ze kunnen worden geanalyseerd &#8211; kan nu voor snelle stappen voorwaarts zorgen. Dan moeten spelers in de voedselketen wel goed uitleggen waarvoor zij klantdata gebruiken en hoe zij deze verwerken en beschermen\u201d, stelt Morren.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>Het volledige rapport Voedsel wordt bits and bites.
