Toch moeten supermarkten door die zure appel heen bijten, klinkt het evenwel.<\/p>\n<p><!--break--><\/p>\n<p>\u00a0<\/p>\n<h2>Groei voor online<\/h2>\n<p>De laatste jaren is e-commerce in de Nederlandse supermarktbranche flink gegroeid: in 2014 lag het onlineaandeel nog onder de 1%, in 2017 is dat tot boven de 3% gegroeid. Online is nu al goed voor ongeveer 1 miljard euro omzet. Dat is echter geen rendabele omzet: op basis van de gegevens van 265 franchisesupermarkten berekende Marshoek dat supermarkten met een webshop gemiddeld 0,1% rendement inleveren, oftewel 7.000 euro. Dat komt doordat de rendementen op e-commerce aanzienlijk lager liggen dan de activiteiten in de fysieke winkel.<\/p>\n<p>\u00a0<\/p>\n<p>Voor de omzetontwikkeling lijkt e-commerce dus gunstig uit te pakken, maar voor het rendement zeker niet, aldus Marshoek. Wat overigens niet wil zeggen dat ondernemers e-commerce links kunnen laten liggen: het is immers \u00e9\u00e9n van de kanalen waar de klanten sowieso hun boodschappen gaan doen. Daarnaast is de verwachting dat de omzetgroei online een verbetering zal opleveren in het autonome verdienmodel. In Belgi\u00eb ligt de e-commerceomzet in food lager dan bij onze noorderburen, maar de conclusies over de rendabiliteit zijn wellicht ook hier relevant.<\/p>\n<p>\u00a0<\/p>\n<h2>Voedselverspilling<\/h2>\n<p>Verder blijkt uit de benchmark dat Nederlandse franchisesupermarkten elk jaar gemiddeld zo\u2019n 125.000 euro aan rendement liggen door verspilling op diverse onderdelen. Met name voedselverspilling is een actueel thema: gemiddeld wordt er in de supermarkt 1,5% van de consumentenomzet aan voedsel verspild. Dat lijkt misschien niet veel, maar met een gemiddelde weekomzet van 158.738 euro is dit een verspilling van ruim 126.000 euro per winkel per jaar.
