Achterhaalde formules moeten zich nu heruitvinden.<\/p>\n<p><!--break--><\/p>\n<p>\u00a0<\/p>\n<h2>Faillissementen op komst<\/h2>\n<p>Is er nog leven na de lockdown voor het gros van de Belgische horecaondernemingen? Het beeld is gemengd, denkt foodservice-expert Eddy Bovijn van <strong>Food In Mind<\/strong>. Hij peilde naar de verwachtingen van 120 sleutelspelers in alle segmenten van de foodservicewereld en bundelde de inzichten in een rapport met de titel \u201c<em>Foodservices anno 2022 <\/em>&#8211; <em>Hoe ons wapenen na corona<\/em>\u201d.<br \/>\n\u00a0<\/p>\n<p>De sector van de \u2018quick service\u2019 restaurants heeft tijdens de coronacrisis redelijk goed stand gehouden dankzij take-out diensten, zo blijkt. Algemeen zag dit segment de omzet met 19% dalen, dit jaar verwachten ze een groei met 10% &#8211; waarmee ze dus nog niet op het pre-coronaniveau komen. De toekomst oogt dan ook onzeker: \u201cWe verwachten faillissementen. Zo\u2019n 20% gaat verdwijnen, vooral kleinere, niet georganiseerde spelers. Quick service restaurants kampen met een hoge personeelskost: investeringen in technologie moeten die kost naar beneden helpen. Restaurants kopen vaker maaltijdcomponenten in, en half afgewerkte producten. Met name de diepvriesfabrikanten doen goede zaken.\u201d<\/p>\n<p>\u00a0<\/p>\n<h2>Take-out waait weer over<\/h2>\n<p>Dankzij afhaaldiensten konden ook de betere restaurants stand houden: ze verloren gemiddeld 40% omzet vorig jaar en hopen dat verlies dit jaar te recupereren. Zodra de restaurants weer open mogen, zal die afhaalhype snel afnemen, denkt Bovijn. \u201cDe mensen hebben het wel een beetje gehad. Wel 70% van de consumenten haalt nooit maaltijden af.\u201d Bovendien zal 14% van de bevolking na de vaccinatie meer frequent op restaurant gaan dan ervoor, blijkt uit post-corona onderzoek door Food in Mind en iVOX.<br \/>\n\u00a0<\/p>\n<p>Wegrestaurants kenden een terugval met 47% en rekenen op een herstel van 20% dit jaar. Ze hadden sterk te lijden onder de verminderde trafiek. Ook moesten ze overschakelen op een voorverpakt concept. Buffetformules zijn in coronatijden geen optie, en mogelijk komen ze ook niet terug \u2013 of toch niet in ongewijzigde vorm. \u201cZe moeten zich heruitvinden. De klassieke formule van spelers als <strong>Lunch Garden<\/strong> en <strong>Autogrill<\/strong> is achterhaald.\u201d<\/p>\n<p>\u00a0<\/p>\n<h2>Tankshop wordt pauzeplek<\/h2>\n<p>Ook de sector van de shops bij tankstations staat voor grote veranderingen, stelt Eddy Bovijn. \u201cHet worden meer dan ooit buurtwinkels. De verblijfstijd van klanten zal er langer worden, naarmate de elektrische wagen doorbreekt. Mensen komen dan niet meer snel tanken, maar zullen de wagen komen opladen, en intussen ter plaatse werken en\/of iets eten. Shop &amp; go wordt eat &amp; go\u2026\u201d<br \/>\n\u00a0<\/p>\n<p>Er is in de sector een significante kentering aan de gang, ziet Bovijn. De jongere generatie horecaondernemers denkt in concepten: ze spelen slim in op trends, met een beperkte kaart. \u201cDe toekomst is aan een sterke branding en aan schaalbare franchiseconcepten. <strong>Bavet<\/strong> is een mooi voorbeeld, met veel beleving en toch kosteffici\u00ebnt. De sector heeft nood aan managementskills, professionalisering.
