Het bedrijf wil Europees marktleider worden in digitale Aziatische restaurants.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Bestaande restaurants helpen<\/h2>\n\n\n\n<p>Yu.Eat, de startup van de broers Yifeng en Yishen Yu, is een jonge speler in de sector van de virtuele keukens die een heuse boom kende tijdens de lockdowns in&nbsp;2020 en&nbsp;2021. Het bedrijf is nu al actief in Belgi\u00eb, Nederland en Duitsland. Wat de aanpak van Yu.eat onderscheidt is een kapitaalextensief model, dat gebruik maakt van bestaande infrastructuur om snel op te schalen, vertelt Yifeng Yu aan RetailDetail.<\/p>\n\n\n\n<p>\u201cWat wij doen, is bestaande restaurants helpen om bijkomende omzet te genereren via bezorgplatforms, door het integreren van onze Aziatische virtuele merken. We helpen hen met marketingondersteuning, met makkelijk te bereiden recepten, met exclusieve ingredi\u00ebnten, met training en met de integratie op de bezorgplatformen.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Partnerships aangaan<\/h2>\n\n\n\n<p>\u201cNa mijn studies opende ik vier kleine Chinese afhaalrestaurants. Toen de pandemie uitbrak bouwden we die om tot <em>dark kitchens<\/em> met verschillende concepten op de bezorgplatforms. Maar fysieke locaties opschalen is moeilijk, tijdrovend en kapitaalintensief. Daarom bedachten we een andere, makkelijker schaalbare optie. Er zijn al zoveel restaurants, die het vaak moeilijk hebben bovendien. Waarom bijkomende concurrentie openen, als we ook partnerships kunnen aangaan?\u201d<\/p>\n\n\n\n<p>Dat is een win-win: Yu.eat hoeft niet te investeren in keukens en medewerkers, de restaurants zien extra omzet. \u201cWe maken het hen daarbij zo makkelijk mogelijk. Ze hebben al hun eigen business, ze willen dus niet teveel complexiteit toevoegen in de keuken.\u201d Aan succesverhalen geen gebrek: \u201cE\u00e9n van onze eerste partners zette zijn zaak te koop op Immoweb, maar we hielpen hem doorheen Covid en vandaag verkoopt hij nog steeds onze twee merken.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Licentiemodel<\/h2>\n\n\n\n<p>Die twee merken, dat zijn Chifuri voor de traditionele Chinese keuken, en Incheon voor Koreaanse gefrituurde kiprecepten. Waarom precies deze twee? \u201cDe Chinese keuken is heel populair in Europa. Koreaans is meer trendy, en het boomt. We hebben een sterk R&amp;D-team om de volgende trendgolf te ontdekken en onze partners te helpen om daarop mee te surfen. Als wij ergens in de wereld nieuwe trends identificeren, dan kunnen we de eerste zijn in Europa om zo\u2019n nieuw concept te lanceren.\u201d<\/p>\n\n\n\n<p>Yu.eat is geen franchisingconcept, wel een licentiemodel, zegt Yu. \u201cPartners kunnen onze merken gebruiken, onze recepten en onze exclusieve ingredi\u00ebnten \u2013 die zijn belangrijk, omdat ze de ruggengraat uitmaken van het concept. We waken streng over de kwaliteit die de partners serveren onder onze merken.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Stap voor stap<\/h2>\n\n\n\n<p>De startup heeft Europese ambities, maar wil zich niet vergalopperen: \u201cWe willen de leider worden van de Aziatische digitale restaurants in Europa. Daar komen we stap voor stap. Voor verdere expansie hebben we verschillende landen in gedachten, uiteraard vooral de grotere markten rondom ons. Maar eerst willen we consolideren op de drie markten waar we al actief zijn. We zijn immers nog maar een jaar bezig.\u201d<\/p>\n\n\n\n<p>Groei komt niet enkel van bijkomende partnerrestaurants, maar ook van nieuwe merken: \u201cVandaag beperken we ons tot Chinees en Koreaans, maar het potentieel om verder op te schalen is heel erg groot: alleen al in China heb je zoveel verschillende keukens. We ontwikkelen bijkomende Aziatische merken en recepten, maar die houden we nog geheim.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Retentie is cruciaal<\/h2>\n\n\n\n<p>Hoe is het met de sector van de virtuele keukens gesteld, na de pandemie, in een moeilijke economische context? \u201cNa de explosie van de virtuele keukens tijdens Covid heb je nu in sommige steden wel erg veel aanbieders. Dat is goed voor de consumenten, maar je moet de kwaliteit strikt bewaken, want als het tegenvalt, keert de klant niet terug\u201d, weet Yu.<\/p>\n\n\n\n<p>\u201cWe naderen een punt waarop enkel restaurants die goede kwaliteit leveren, zullen overleven op de bezorgplatforms. Het belangrijkste in een business als de onze is retentie. We analyseren de data die de bezorgplatforms ons kunnen bezorgen.\u201d Dat recent darkkitchenpionier <strong>Casper<\/strong> <a href=\"https:\/\/www.retaildetail.be\/nl\/news\/food\/dark-kitchen-pionier-casper-legt-de-boeken-neer\/\" target=\"_blank\" rel=\"noopener\">de boeken moest neerleggen<\/a>, vindt Yu jammer: \u201cCasper had een traditioneler concept met fysieke locaties, wat erg kapitaalintensief is. Wij pakken het anders aan, met een lichtere structuur. We zien in de markt een algemene verschuiving van fysieke locaties naar het concept van virtuele merken.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Organisch groeien<\/h2>\n\n\n\n<p>Een eerste investeringsronde in juni leverde de ondernemers twee miljoen euro op, van het Waalse investeringsfonds Wapinvest en enkele &#8216;business angels&#8217;. \u201cOp dit moment zijn we niet op zoek naar bijkomend groeikapitaal. We groeien organisch. We denken dat er groot potentieel is, maar ook dat te snel groeien tot elke kost niet ons model is.\u201d<\/p>\n\n\n\n<p>Dit verhaal begon al 27&nbsp;jaar geleden, benadrukt Yu : \u201cToen openden onze ouders, die dertig jaar geleden in Belgi\u00eb arriveerden, een Chinees restaurant in Edingen \u2013 een zaak die ze vandaag nog steeds hebben. Daar groeide ik op met mijn broer, we hielpen er van jongs af aan.
